Fruit flies are small tan flies, often with red eyes, hovering around ripening produce, recycling, bins and drains. They breed fast enough that a small oversight becomes an infestation in a week.
A female lays hundreds of eggs on the surface of anything fermenting, and the egg-to-adult cycle can run about eight days in a warm kitchen. That speed is why they seem to appear overnight.
The source is nearly always smaller and more boring than people expect: a forgotten potato at the back of a cupboard, residue in the bottom of a recycling bin, a spill under a dishwasher, a mop head, a beer line drip tray, or the same organic drain film that feeds drain flies.
We find and eliminate the breeding site, treat the adults, and go through the sanitation points that will otherwise let it restart. In bars and restaurants that means drip trays, bar mats, drains and the areas beneath fixed equipment.
